At least 4-5 years in International experience in culinary management
Bachelor’s degree or related culinary degree preferred or any relevant certificates
Opening experience beneficial and HACCP certified beneficial
Possesses highly creative, open minded, up to date with food trends styles
Strong in quality control, hygiene, sanitary control, food cost management, produce sourcing and testing.
Team player striving to train and motivate a team of multi-national chefs.
Proven ability to develop a culinary team
Supervise the Culinary team in providing best-in-class dining experiences.
Ensure that all daily administration of the Kitchen operation and ensure that the Sous Chef has been briefed accordingly and that the day’s activities are well planned.
Delegate tasks and work side-by-side with the team
Anticipate and forecast peaks and troughs in business demand by acquiring daily business information and share any concerns with the Senior Management to make proactive decision making in resource utilization.
Have a hands-on approach towards peek service times and prepare dishes accordingly to assist the brigade or assistance in service at the request of the Senior Management.
Ensure that all the kitchens in the property has the necessary mis en place needs filled before service times.
Standardize production recipes to ensure consistent quality
Liaise with the F&B Operations Manager the Kitchen Operating Budget and take proactive initiatives to ensure Food Costs, Chemical and Cleaning consumption, Kitchen Fuel and all other budgeted Kitchen Resources meet the targets that are set monthly.
